So here I am, back to my blogging ways. Or at least, I hope to be. It’s been a long, eventful year since I last set foot in these shores – Hubs & I crossed our first big marriage milestone (1 year, woo-hoo!), we moved cities (we’re big city people now!) and I got a job!
There’s been a whole lot of ups and downs, much introspection about what I want to do with my life (write! cook! design pretty things! start my own company!) and then not much of doing anything about it. I was all –
Yep, not as great an idea as it seemed at the time, considering a whole year later, I’m not in the right place for a single of my life goals. Ugh. UGH. Another un-great idea was stress-eating this 2-minute fudgy mug brownie. Its warm fudginess is will make your wallowing spirits soar but it’s not a friend to your weighing scale. That and the fact that it literally only takes two minutes to put together, means it’s a serious contender to your other dessert alternatives i.e. not having any at all.
Everything you need to make this one-mug wonder is probably sitting in your pantry right now. So, chop-chop!
2-MINUTE MUG BROWNIE
Prep Time: 1 min | Cook Time: 1 min | Makes 1 serving
¼ cup all-purpose flour (~30g)
¼ cup dark brown sugar
2 tbsp cocoa powder (I use Hershey’s)
2 tbsp olive oil
2 tbsp milk
1 tbsp coffee liquor* (optional)
1 tbsp chocolate chips (optional)
- In a 10 oz (~300ml) mug (those large coffee mugs will do nicely), whisk all of the dry ingredients together with a fork till the mixture is a uniform light brown colour
- Add all of the wet ingredients and whisk thoroughly with a fork, making sure to scrape the bottom and sides of the mug till no streaks of flour remain. You should have a thick, gloopy mess in the mug now. That’s perfect!
- Smooth the top of the mixture, sprinkle on the chocolate chips if using and pop it in the microwave on high for 1 minute.
- Once out, let it sit for a couple of minutes before digging in (if you can wait that long). If you’re feeling particularly greedy, top it off with a scoop of vanilla ice-cream or a dollop of Nutella! Nom, nom!
*For the coffee liquor, use either hot brewed coffee or mix ½ tsp instant coffee powder with a 1 tbsp hot water.
